From November 11 to December 26, 2024, the Ganymed Brasserie in Berlin-Mitte will be celebrating a special culinary tradition: the Christmas goose dinner. Guests can look forward to a festive meal that begins with 25 hours of careful preparation of the goose. The goose is dipped in a marinade of winter spices, stuffed with apples, plums, onions and other spices and then left to rest for 12-18 hours to fully absorb the flavors. After gentle low-temperature cooking for 7 hours and a high-heat finish, the goose is presented with crispy skin and succulent meat.
The Ganymed Brasserie complements the goose dish with homemade cassis red cabbage, fresh kale and homemade dumplings, which perfectly underline the flavor of the goose.
